Ingredients (serves 6-8)
3-4 TBSP Olive Oil
Pack of fresh Mint
1 Large Watermelon (a mini watermelon will serve 4)
Salt
Feta Cheese (I use FYH vegan)
Instruction
Chop watermelon into chunks
Finely chop mint
Place watermelon in large mixing bowl
Lightly salt watermelon and toss
Pour 3-4 TBSP of olive oil on watermelon, add chopped mint, toss
Sprinkle feta cheese, serve
