Thai Noodles w/ Tofu

Ingredients

  1. Soba Noodle or Ramen/Yakisoba etc. (2 sticks)

  2. Broccoli Chopped (2 crown heads)

  3. Package of firm tofu

  4. Spicy Thai Blend (see below)

  5. 3 Green Onions chopped (separate greens & whites)

  6. 2 Garlic Cloves

  7. 1/2 cup Soy Sauce

  8. 1/4 cup Sesame Oil

  9. Red Chili Flakes

  10. 1 TBSP Honey

  11. 1 Lime (quartered)

Thai Blend (1 TBSP each)

  1. Paprika

  2. Tumeric

  3. Black Pepper

  4. Ground Coriander

  5. Cumin

  6. Ground Ginger

  7. Cayenne

Finishing Sauce

  1. 1/4 cup water

  2. 3 TBSP soy sauce

  3. 1/2 TBSP honey

  4. 2 TBSP sesame oil

  5. Whisk all ingredients, set aside


Let’s Make It!

  1. Press Tofu for 30 minutes, drain

  2. Cube tofu or crumble into bowl

  3. Add all soy sauce, sesame oil, whites of onion, 3/4 of the minced garlic, and 1 TBSP of the Thai seasoning blend to tofu bowl. Mix well and let marinate for 20 minutes

  4. While tofu marinates, cook noodles based on box instruction and set aside

  5. Heat a drizzle of sesame oil to pan, over medium high heat, add marinated tofu with remainder of marinade. Cook until crispy brown, stir occasionally

  6. Remove tofu from pan, set aside

  7. In the same pan, heat another drizzle of oil, medium high heat, add chopped broccoli and cook, tossing until tender, salt and pepper to taste. Note* you can quickly steam broccoli in pan with 1 TBSP of water and cover

  8. Remove cooked broccoli, set aside

  9. To the same pan, add the remaining garlic, chili flakes, and a drizzle of olive oil, cook unit fragrant (30 seconds)

  10. Add noodles into pan, toss to coat, lower heat to medium, add another drizzle of sesame oil, add in cooked tofu and broccoli, and finishing sauce

  11. Toss to coat, divide between bowls, garnish with scallion greens and a squeeze of lime

  12. Enjoy!
