Dressing
2 TBSP Olive Oil
2 TBSP Rice Vinegar
2 tsp. White Sugar
1/4 cup Soy Sauce
2-3 TBSP Sesame Oil
1 Garlic Clove minced
Add 1-2 TBSP hot water, before oil for binding
1/2 tsp. Hot Chili Oil optional
Instruction
Add sugar and hot water first, blend until sugar dissolves. Add rest of ingredients, whisk and taste. Add chili per taste. Can sub sugar for honey, maple syrup, date syrup, etc., check ratio substitutions
Set aside
Cold Soba Noodle
2 Rolls Soba Noodle
2 stalks Green Onion
Soy Sauce
1 TBSP Sesame Oil
1 Baby Bok Choy or any other preferred green
2 tsp. White or Black Roasted Sesame Seed
Instructions
Cook pasta based on package directions. Soba cooks quickly, I usually cook dried soba noodle for 2 minutes, then rinse with cold water, set aside
Chop Green Onion, set aside
Chop green, sauté lightly with sesame oil, medium heat, splash of soy sauce (2-3 minutes, until bright green)
Assemble 2 bowls, add noodle, greens, sprinkle with sesame seed and drizzle dressing over
Toss and enjoy!
