Ingredients
Package of Beyond Meats Hot Italian Sausage
1 bundle Kale or Spinach (any preferred green)
FYH Parmesan Cheese (Follow your heart)
Croutons (homemade or store bought, optional)
Italian Seasonings (any blend or see below)
24 oz. Can of Tomato Sauce or Crushed/Diced
Vegetable Stock (any preferred stock, based on package)
4 cups of Water
1 Cup Orzo
1/2 chopped Brown Onion
1 clove minced Garlic
1 TBSP Olive oil
Salt & Pepper to taste
Fresh Basil optional
Seasoning Blend
1 TBSP Oregano
1/2 TBSP Basil
1 tsp Garlic Powder
1 tsp Onion Powder
Sprinkle Red Pepper Flakes
Let’s Make It!
Heat pan with a drizzle of olive oil, add onion and garlic, cook 30 seconds
Roughly break sausage into chunks, toss in pan, cook 5-6 minutes, until brown. Break down any big chunks.
Deglaze the pot by adding in water and veggie stock (I use Better than Bouillon)
Stir in tomato sauce can, seasonings, and salt and pepper to taste
When the stock comes to a boil, add in the orzo, cover and let cook 8-10 minutes, medium to low heat. Stir in between. Taste, add any seasoning needed
Then add kale or spinach, let cook 2 minutes
Serve in bowls, garnish with fresh basil and croutons
