Ingredients
8 oz. Orzo Pasta
4-5 Green Onions, chopped
1/2 Lemon, zested and juiced
1 15 oz. can Chickpeas
1/2 Green Pepper, chopped (can also use Broccoli, Cucumber, or other peppers)
1/4 cup fresh Parsley
1/4 cup fresh Mint
1/4 Cup fresh Basil
1/4 cup fresh Dill
1/2 tsp. Salt & Pepper to taste
Dressing
1/2 cup Extra Virgin Olive Oil
3 Tbsp Red Wine Vinegar
Make It
Cook the Orzo pasta, based on box instructions. Set aside and let cool
Chop up green onions, bell pepper, and all herbs
Drain can of chickpeas, water/wash until foam disappears
Place orzo in large bowl, add 1/2 tsp. salt & pepper
Zest Lemon onto orzo and mix
Add chickpeas, green onion and bell pepper, mix (along with other veggies, if using)
Add all herbs, mix
Add dressing and lemon juice, mix and taste. Add more salt and pepper if needed
Once cooled completely, place in refrigerator for up to 4 days
