Cauliflower Steaks

  1. 1 large cauliflower head

  2. Preheat oven 450 degrees

  3. You can get 2 steaks from 1 head of cauliflower, keeping the stem intact, cut off all the leaves

  4. Rinse the cauliflower, then cut down the middle. Take one half and slice a thick steak off, do the same with the other half

  5. I like to use the remaining cauliflower bits in salads

  6. Place cauliflower steaks onto a baking sheet and brush with olive oil

  7. Sprinkle salt & pepper onto cauliflower steaks and place in oven. Bake for 15 minutes, turn over, brush with olive oil and continue roasting another 10-15 minutes- until golden brown


Chimichurri Sauce

  1. 1/2 cup freshly chopped Parsley

  2. 1/4 cup chopped Cilantro

  3. 3-4 cloves minced Garlic

  4. 1/2 tsp Oregano

  5. 1/4 tsp Red Pepper Flakes

  6. Squeeze of Lemon

  7. Salt & Pepper to taste

  8. Olive Oil

  9. Blend all ingredients together, except the oil. Once blended, add olive oil slowly, blend to desired thickness

  10. Spoon chimichurri sauce onto cauliflower steaks and enjoy!

  11. Great with a side of any steamed or grilled veggies
