Adobo Fajita Tacos

Ingredients

  1. 1 Firm Tofu block (pressed)

  2. 2 packs White Mushroom or preferred Mushroom, sliced

  3. 1 Bell Pepper (any preference) thinly sliced

  4. 1/2 Yellow Onion (thinly sliced)

  5. Pack of Tortillas (any preference, I used Almond flour by Siete)

    Marinade

  6. 2 Tbsp Adobo sauce * if you can’t find, get canned adobo chili

  7. 2 Tbsp Avocado Oil or preferred

  8. 1-2 tsp. Ground Coriander

  9. 1-2 tsp. Cumin

  10. 1-2 tsp. Salt


Let’s Make It!

  1. Pre-heat oven to 425 degrees

  2. Mix all marinade ingredients together

  3. Wash and cut all veggies and place in deep baking pan

  4. After pressing, cube tofu block and add to baking dish

  5. Add marinade to baking dish and mix to coat all veggies and tofu

  6. Place in oven for about 25 minutes

  7. While veggies are roasting, pan fry your tortilla with a little bit of olive oil, 10-15 seconds per side, if desired

  8. Garnish tacos with cilantro, cheese, lime, whatever you like!
